Preparation :
- Peel the ripe bananas then mash them using a fork in a salad bowl.
- Add the 2 eggs and mix.
- Beat the mixture with the sugar then the melted butter. Add the flour and baking powder that you have previously sifted. Mix until the mixture is smooth.
- Carefully add the milk and mix again. The dough should be homogeneous but not too liquid.
- Heat a pan with a knob of butter. When the pan is hot, pour in a ladle of batter to obtain a pancake approximately 10 cm in diameter.
- Leave to cook for 2 to 3 minutes. Halfway through cooking, flip the banana pancake so that it is nicely browned on both sides.
- Repeat the operation until the banana pancake batter is used up, buttering the pan regularly so that they do not stick when cooking.
To be enjoyed with the accompaniment of your choice: sugar, honey, spread or even chopped bananas with nuts. Treat yourself for Candlemas by enjoying these tasty pancakes, a slightly healthier (but still delicious) alternative to pancakes.
